Danish Lagekage is yellow cake layers filled with pastry cream and raspberry jam iced in a buttercream frosting. Simple but delicious!

8/27/2020 0 Comments My First Vertical Layer Cake!I was really excited to try a vertical layer cake for the first time! It's fun to watch people's reactions when they slice into it since it looks different than is expected! It was also the first time I have baked with (or tasted) elderflower and I really liked it! This was a vanilla sponge cake soaked in an elderflower syrup with a blackberry Swiss meringue buttercream made to celebrate the birthday of a dear friend.
7/19/2020 0 Comments Chocolate Millionaire's CakeI had high hopes for this cake - chocolate cake layers, caramel sauce, shortbread pieces, chocolate drizzle on the top. Sounds good, right? It ended up just being overpoweringly sweet to the point that no one could eat more than a few bites in one sitting. I know not every recipe can be a winner but I really had been hoping for more of a wow factor with this one! On to the next baking experiment... 12/29/2019 0 Comments Princess TortaPrincess torta is my friend's favorite cake and I had the opportunity to make it when she was visiting for her birthday! It is always nice to be able to bake something that creates this much excitement! Princess torta is a fairly simple cake - vanilla cake layers, pastry cream, jam, whipped cream and marzipan but it is still delicious when it all comes together! The cake is topped with marzipan leaves and a marzipan rose.
12/19/2019 0 Comments Black Forest CakeThis was a super last minute request. I had less than two days to plan and bake the cake but I pulled it off! It was a sour cream chocolate cake soaked in a Kirsch simple syrup. The layers were filled with a boiled vanilla frosting and a cherry ganache. The whole cake was iced in a milk chocolate Swiss meringue buttercream and I tried a new technique with the icing to make ruffles up the side. I added a 'Happy Birthday' cake topper and some fresh cherries to finish it off.
12/17/2019 0 Comments Christmas Tree CupcakesI saw a similar design to these on Instagram and knew immediately that I wanted to make them. The Christmas potluck lunch at work seemed like the perfect reason! These are sour cream chocolate cupcakes filled with a white chocolate fresh mint ganache and topped with a vanilla bean and peppermint Swiss meringue buttercream. Each cupcake was topped with a gold fondant heart and then rainbow and mini gold star sprinkles.
12/7/2019 0 Comments Bollywood CakeI was SO excited when I heard the birthday party theme this year was Bollywood! I love bold colors and this theme really allows you to let your imagination run! They only needed a single tier for the party in terms of cake servings but I thought the theme would be conveyed better by a multi-tier cake so I did it as a display cake with her real birthday cake on the side. The elephant cake topper is made with rice cereal treats covered in fondant. The top tier was covered in a hot pink fondant and piped with royal icing (and painted with gold). The middle tier was covered in blue fondant. A drape of orange fondant was added to look like a sari. Some accents were piped on and others were added in fondant. The bottom tier was covered in a purple fondant. I added a fondant border to the top and bottom of the tier and then added fondant flowers which were painted gold and dots piped on with royal icing. All in all, this is definitely one of my favorite cakes I have ever done and the birthday girl's reaction made it worth all the work it took to get this one done :) The "real" cake was vanilla bean cake filled with caramelized white chocolate and passion fruit infused chocolate chunks. Each layer was covered with a passion fruit caramel sauce and passion fruit Swiss meringue buttercream. The passion fruit icing on the outside of the cake was piped on with various tips and a bright "Happy Birthday" cake topper finished it off!
11/23/2019 0 Comments Cookies n' Creme CupcakesThese cupcakes were for a cool 8 year old boy's birthday party! The cupcakes were sour cream chocolate cake. I hollowed out the centre of each cupcake and filled them with an Oreo cream cheese filling. The cupcakes were topped with cookies n' creme American buttercream frosting and a mini Oreo. I had some leftover batter so I made a bunch of mini cupcakes which are the same minus the cream cheese filling. These cupcakes were good but they were so sweet that even some of the kids struggled to finish them!! 11/2/2019 1 Comment Baileys Hot Fudge CupcakesWhen faced with the dilemma of what to bring to a poker night, I decided on these Baileys hot fudge cupcakes. The cupcakes were chocolate Irish cream cake which was then hollowed out and filled with a chocolate Irish cream ganache. Each cupcake was topped with a swirl of Irish cream Italian meringue buttercream, dusted with cocoa and drizzled with Baileys hot fudge sauce. These were super messy to eat but really delicious! There was a whole bottle of Baileys in these cupcakes but unfortunately they didn't get anyone tipsy enough to give me an advantage at poker ;-) 10/14/2019 0 Comments Banana Butterscotch CakeI made this cake for Thanksgiving dinner as a back up plan. I needed cream cheese for my first choice recipe and the grocery store was out of cream cheese. I can't imagine that my first choice cake could have been any better than this one though! The cake layers are banana chocolate chip. Each cake layer was topped with a chocolate ganache and a butterscotch Italian meringue buttercream. I added some chocolate and caramel crisp pearls to the top of the cake for decoration. Happy Thanksgiving everyone! |
