This cake was a sour cream chocolate cake with chocolate mousse buttercream. The icing recipe involves making a chocolate mousse from scratch and then whipping in butter to form the icing. It is delicious and I will definitely be making it again!
The most challenging part of this cake was making Luigi out of gumpaste coming out of a warp tube.
I got to look at pictures of Mario and Luigi cakes with the birthday boy so I made this cake based on what he liked. His favorite element in any of the cakes was definitely the bomb so I made a big bomb for the top of the cake out of rice cereal treats.
The cake was finished off with a variety of Mario-themed fondant decorations. Happy Birthday Lachlan!! I hope you like your cake!
It's not very often anymore that I bake only for taste so this was fun for me to make these cupcakes without worrying about any sort of decoration.

I actually think the caramel buttercream went better with the chocolate cake but these were yummy nonetheless! :)
