9/5/2010 0 Comments Outdoors-y 50th Birthday CakeThis cake was a triple layer carrot cake with vanilla cream cheese icing. It would have had a more polished look if the cake was covered in fondant but the rustic look somehow suited the outdoors-y theme. On the top of the cake was a gumpaste replica of Jaci, a Rhodesian Ridgeback-Rottweiler cross. She's a beautiful dog so trying to recreate her from gumpaste was the most stressful part of making this cake! The trees and chanterelles were made with fondant brushed with petal dusts. The button mushrooms were made with fondant painted with brown food coloring. The ferns were piped on with cream cheese frosting - for next time, I've noted that buttercream would hold its shape a lot better! The river rocks were made with marbled black and white fondant. The cake was cut into a topsy turvy shape. This technique definitely works better when covered with fondant as I found it rather looked like the topsy turvy shape happened by accident and not on purpose. The hills on the bottom tier were done with brown fondant brushed with brown petal dusts for depth.
