9/29/2009 0 Comments Cyclotron CakeThis cake was made to celebrate a 28th anniversary of employment at TRIUMF. The insignia on the top of the cake is a simplified version of a cyclotron and having seen a picture of a real one, am I ever happy it was simplified! The cake was a carrot cake with vanilla cream cheese icing, which is one of my favorite flavors that I do. The whole cake was then covered in a butter pecan-flavored fondant. A border of cream cheese icing rosettes was piped around the base of the cake and red and white candy melts were placed in between each rosette.
...Now if only I could imagine working 28 years in the same place! What an accomplishment that is!

9/22/2009 0 Comments Eiffel Tower Cake!!Now I must admit when this request first came in, I was both extremely excited and incredibly intimidated by the prospect of trying to create the Eiffel Tower out of cake... and with good reason. This is one of the most difficult cakes I have ever made but I am pleased with the final result! The bottom 4" of the Eiffel Tower was the cake and the top 12" of the tower was made with rice cereal treats to give better stability. The cake was lemon cake iced in a chocolate Italian meringue buttercream and covered in a lightly-chocolate flavored fondant. The lattice work was piped on using black-tinted chocolate buttercream. The Happy Birthday banner, French flag, Arc de Triomphe (which is to scale against the tower according to Wikipedia, although it looks a little off to me!) and shrubs are done with fondant.
I've been doing a lot of cupcakes lately it seems! These are strawberry cupcakes with strawberry Swiss meringue buttercream. I've been wanting to try out a strawberry cake for ages and it was good to be able to do so before fresh strawberries become hard to find! The cupcakes I've done lately have allowed me to work on improving new techniques - the Swiss meringue
buttercream on these cupcakes took two attempts but the taste is well worth the extra effort! Buttercream done with egg whites (either Swiss or Italian) is definitely a better product! I may never use icing sugar again! 9/7/2009 0 Comments Tiramisu CupcakesThese tiramisu cupcakes were vanilla bean sponge cupcakes soaked in a
Kahlua-espresso soaking syrup topped with mascarpone cream frosting and dusted with cocoa. Simple but delicious! 9/5/2009 0 Comments Jungle CakeThis two tiered cake is sour cream chocolate cake iced in vanilla buttercream. The monkey, giraffe and elephant are all done with fondant as is the banner. The animal print and grass border are done with vanilla buttercream. The smash cake for the birthday boy is vanilla buttermilk cake iced in vanilla buttercream. This monkey is also done with fondant as is the number 1 the monkey is holding.
