Now I must admit when this request first came in, I was both extremely excited and incredibly intimidated by the prospect of trying to create the Eiffel Tower out of cake... and with good reason. This is one of the most difficult cakes I have ever made but I am pleased with the final result!
The bottom 4" of the Eiffel Tower was the cake and the top 12" of the tower was made with rice cereal treats to give better stability. The cake was lemon cake iced in a chocolate Italian meringue buttercream and covered in a lightly-chocolate flavored fondant. The lattice work was piped on using black-tinted chocolate buttercream. The Happy Birthday banner, French flag, Arc de Triomphe (which is to scale against the tower according to Wikipedia, although it looks a little off to me!) and shrubs are done with fondant.
