This cake was for a birthday at the office. It was supposed to be a six layer coconut cake but the cake layers didn't rise as they should have so it was a four layer cake instead. The passionfruit curd was amazing and I will definitely make it again. Overall the flavors in this cake were good but since the cake didn't rise, it was too dense for my liking.
This cake was a lemon blueberry cake with cream cheese icing. I was really excited that I managed to find fresh blueberries (from South America!) in February so I didn't have to use frozen.
I'm not generally a fan of lemon but this cake was delicious and I will definitely be making it again! I think I'll be modifying the recipe too for other uses such as orange cranberry! And the cream cheese icing was to die for so I think it may be my 'go to' for carrot cake from now on as well.
