This was a recipe I've been wanting to try for years! Two birthdays at the office in a 5 day period was as good a reason as any! The cake layers were pear spice cake and the filling was a butter rum pecan crunch filling. The butter rum pecan crunch filling was the main reason this recipe was so appealing to me. I mean, how amazing does that sound! The whole office seemed to give it rave reviews so I think the recipe is a keeper!

10/31/2021 0 Comments Halloween-themed baby shower cakeThis cake was for a Halloween-themed baby shower. I love it when I get a chance to make unique cakes and this one certainly fit the bill! The cake had a milk chocolate caramel filling. I haven't made this filling in quite awhile now but it's one of my favorite recipes! So delicious! The cake layers were fudgy chocolate cake. It's a good cake for carving a 3D cake because it holds together quite well. The finished cake was iced in a caramel Swiss meringue buttercream. The homemade caramel for the buttercream was a different caramel recipe than the one in the filling! I started with sheet cakes and carved the cake into the shape of the torso... This was one of the smoothest fondant coverings I've ever achieved! And I added a fondant bow to dress it up a little. The baby skeleton was cut out of fondant and a purple gerbera was added on the side. Happy Halloween everyone!
6/29/2021 0 Comments Chocolate Raspberry Mousse CakeI haven't made many mousse cakes - only the few I tried when I learned mirror glaze - but I wanted this one to be not too plain and basic! For the cake topper, I made a gumpaste peony and bud and added some leaves and a few gumpaste raspberries to tie into the flavors in the cake. This is when the peony was packed to travel but I just really liked how the veining turned out on the underside of the petals! The cake started with a brownie base that I topped with a raspberry simple syrup to ensure it wasn't too dry. On top of that went layers of chocolate mousse, raspberry mousse and white chocolate vanilla bean mousse with fresh raspberries strewn in between each mousse layer. The cake was topped with bittersweet chocolate ganache and the peony added to top it all off.
4/15/2021 0 Comments Cookie Butter and Banana CupcakesI had never tried cookie butter before but I saw this recipe and thought I would give it a try! Never mind these cupcakes, even eating cookie butter out of the jar with a spoon is good! But these cupcakes make it a little more special!
The cupcakes themselves are a light and airy banana sponge cake topped with swirls of cookie butter buttercream and speculoos cookie pieces. These were just right, not too sweet but still felt like a little indulgence! 3/10/2021 0 Comments Caramel Rose CakeThis all started with the birthday girl showing me a sketch of a rose she had drawn. I used that as the inspiration for the white rose topper with gold edging (to match the caramel flavors that are to come!) This was a recipe I hadn't made in awhile but it's so delicious! Vanilla bean cake layers with homemade caramel sauce and a caramel butterscotch buttercream. I added a few chocolate truffles too just to top it off!
Calories don't count on Christmas, right?? This dessert was decadent and delicious! A flourless version of red velvet cake that falls while baking creating a crater in the centre that can be filled with swirls of cream cheese whipped cream. So good! I topped with raspberries and sprigs of rosemary to try to make it look more Christmas-y! Merry Christmas everyone!
This recipe is a go to of mine because it is so good! This is vanilla confetti cake with cream cheese frosting and birthday cake crumbs. I added a bright and cheery happy birthday topper that I had been saving for just the right occasion. Every birthday deserves to include a sweet surprise with sprinkles!!
11/1/2020 0 Comments Back to Basics!It has been years since I made this pumpkin roll but it is still one of my absolute favorites! The pumpkin cake is moist and light and the cream cheese filling adds just a little richness. I added pecan pieces to the cake for the first time and I think they made a nice addition!
10/12/2020 0 Comments Danish LagekageThis was an unusual choice for a Thanksgiving dinner dessert but I decided to steer away from the normal pumpkin-related choices. Danish Lagekage is yellow cake layers filled with pastry cream and raspberry jam iced in a buttercream frosting. Simple but delicious!
8/27/2020 0 Comments My First Vertical Layer Cake!I was really excited to try a vertical layer cake for the first time! It's fun to watch people's reactions when they slice into it since it looks different than is expected! It was also the first time I have baked with (or tasted) elderflower and I really liked it! This was a vanilla sponge cake soaked in an elderflower syrup with a blackberry Swiss meringue buttercream made to celebrate the birthday of a dear friend.
