This is a pistachio butter cake filled with a raspberry cream cheese mousse iced in vanilla buttercream and wrapped in a bittersweet chocolate collar.
The cherry blossoms are made with gumpaste and tinted with luster dust.
It was my first time making the pistachio cake and the raspberry mousse and I would definitely do both again!
It was also my first time doing a chocolate collar and while I definitely did not get it perfect, I was satisfied with the result and look forward to perfecting the technique in the future! With the cherry blossoms added to it, you don't notice the imperfections and I think it makes a lovely birthday cake!
