The last time I made croissants I was 17! My Mom loved them but they didn't taste like croissants should (not like the ones in Quebec City for sure which to this day are the best I've ever had). I'm happy with how this batch turned out, although there still is room for improvement!
I had been planning to make almond croissants but Gourmet Warehouse was out of almond paste yesterday so I went with pistachio! They are delicious - not sure the almond could have been any better.
With the scrap dough, I made pistachio rolls. I used the pistachio butter for the filling and then added a little more pistachio butter on top for the chopped pistachios to stick to.
