A few years ago, I made the pistachio lemon cake from the Momofuku Milk Bar cookbook and it was seriously the BEST cake I have ever had in my whole life! I decided to adapt that recipe to replace pistachio with hazelnut and replace the lemon curd with passionfruit curd.
The cake layers are hazelnut cake. I couldn't find hazelnut paste so I made my own hazelnut praline paste to put in the cake. The cake layers are brushed with hazelnut oil and topped with passionfruit curd, milk crumbs and hazelnut frosting.
It was really good but I must admit it was not as good as the original pistachio lemon version. I think next time I will make the pistachio cake and pistachio frosting and add the passionfruit curd and see how that is!
