This is a banana cake with praline filling and white chocolate buttercream. The praline filling is made with white chocolate ganache and sugared pecans.
This was my first time making sugared pecans - what a form of health food that is! You coat pecans in icing sugar and fry them in vegetable oil. I'm sure that is light in calories, honest!
The cake is covered in fondant to make the look of the pot for the pot of gold at the end of the ranbow. The pot is covered with gumpaste coins and topped with a gumpaste leprechaun.
