This cake was a sour cream chocolate cake filled with chopped cherries and
chocolate shavings and filled and iced in a Tahitian vanilla bean Italian
meringue buttercream.... somewhat a Black Forest cake with a few twists. I
couldn't use the traditional whipped cream as it wouldn't have given the right
look to the outside and the cherries and shaved chocolate had to go inside as
filling instead of on the top. One of the requirements for this cake was no
alcohol so the cherries couldn't be soaked in Kirsch like traditional black
forest cakes but I quite liked the combination using candied cherries instead!
I had wanted to do a cake shaped like a hockey jersey for a few years now so it was good to get the chance.
The logo was made with fondant as was the lettering on the cake board. The rest of the detail was done with buttercream - yum!
